Overnight Chef Assistant, Part-Time, Seasonal

Sandy, Oregon

Our Assistant Chef works part time in our outdoor kitchen, essentially the heart of our village, in the beautiful and cool(at least cooler than the Portland heat sink) Marmot Valley, Sandy OR. They have the opportunity to hone their culinary skills helping prepare meals for 100 people in a primitive kitchen on fire, propane and BBQ. In addition, they interact with campers and other staff who appreciate the service they provide and often want to pitch in to help do it.

You Must Enjoy
  • The smell of wood smoke and the thrill of epic BBQ
  • Cooking in the outdoors, surrounded by trees and fresh air
  • Staying fit and building new muscles while you work a.k.a. "Stewpot CrossFit"
  • Cooking whole foods for most of your meals
  • Inviting kids into the kitchen to help prepare meals as a learning experience
  • Learning what kids like, starting there, then teaching them to truly love food
  • Having access to an archery range, trout pond, hiking trails and overnight camping
  • Be available June 11-August 26 for summer camp, preparing food for 60-100 people each week(ASAP, now that camp has started)
  • 1-3 years of relevant experience in camp or kitchens
  • An Oregon Food Handler Certificate
  • Pre-employment checks such as a criminal background check & reference checks
  • Outdoor and woodfired cooking experience
  • Help prepare whole food meals for campers and staff
  • 18-24 hours/week of paid work(Tues-Thurs 6-8 hours/day)
  • Enforce sanitary regulations: cleanliness of kitchen and storage areas in accordance with Health Code & Camp Safety Guidelines
  • Prepare meals for all participants in outdoor kitchen environment that includes propane stoves, rocket stoves and wood fired ovens(depending of fire ban)
  • Support learning opportunities for campers in the kitchen following health and safety guidelines
  • Be responsible for care of supplies and equipment
  • Meet with Lead Chef to discuss any needed changes/additions to menu, ordering
  • Engage in positive communication with staff and campers
  • Successfully maintained high professional and food safety standards
  • Ability to set and communicate boundaries for youth in a positive way
  • Ability to think on your feet and be creative in challenging situations
  • Intelligent experience with safety and risk management
  • $14.50/hr, lots of fresh air, big trees and good natured folks
Physical Demands...
  • Ability to continuously teach, stand, walk and hike through backcountry terrain, off trail and in sensitive wildlife areas without disturbing endemic species and ecosystems
  • Ability to bend, squat, climb stairs and hills and lift frequently
  • Ability to lift up to 30 pounds frequently

Sandy, Oregon

Camp Trackers is a primitive site with minimal accommodations. If choosing to sleep at camp, staff should come prepared with their own shelter. All meals from Tuesday to Thursday are provided by Trackers.

Trackers Overnight Programs serve campers grades 5-12. Most are coming from the Pacific Northwest, especially the Portland area. A few travel from out of state and will be shuttled from PDX airport to attend programs.
