POSITION - Head Chef
Trackers seeks a Head Chef to lead the food service operations for our Overnight and Residential Camps during the 2020 Season.
Essential FunctionsThe Head Chef is responsible for supervising cooking staff and preparing meals at Camp Roslyn, our residential camp. This entails 3 meals each day for 150 campers and staff. They also plan menus, make detailed preparation instructions, and order food for outdoor kitchens at Trackers Basecamp, Expeditions, and Weekend Adventures. The Head Chef reviews all kitchens for proper food handling practices, and establishes standards for other kitchen employees.
Qualifications- 3 years kitchen experience plus 2 years management experience
- Experience with ordering and inventory, and maintaining a cost-effective budget for large-volume meal preparatioon
- Experience working overnight summer camps preferred but not required
- Strong adherence to safety and health standards
- Familiarity with special diets
- Proficiency in using outdoor as well as commercial kitchens
- Enthusiasm to engage in positive communication with staff and campers
- Successfully maintained high professional and food safety standards
- Ability to set and communicate boundaries for youth in a positive way
- Ability to think on your feet and be creative in challenging situations
- Intelligent experience with safety and risk management
- Must have current Food Handler Card
Employment to start early May to end of August.
Compensation...- Head Chef $815/week base rate + weekly bonus add-ons, lots of fresh air, big trees and good natured folks

Trackers seeks Assistant Chefs for our food service operations at Overnight and Residential Camps during the 2020 Season.
Essential FunctionsThe Assistant Chef executes meal preparation and service for staff and students at Camp Roslyn, our residential camp. This entails 3 meals each day for 150 campers and staff. The Assistant Chef also works with the Head Chef to plan and prepare meals for Basecamp, Expedition, and Weekend Adventures. The Assistant Chef adheres to all proper food handling practices, and actively creates and promotes a clean and safe work environment..
Qualifications- 1-2 years kitchen experience, preferably in a commercial kitchen
- Experience working overnight summer camps preferred but not required
- Strong adherence to safety and health standards
- Familiarity with special diets
- Proficiency in using outdoor as well as commercial kitchens
- Enthusiasm to engage in positive communication with staff and campers
- Successfully maintained high professional and food safety standards

Employment to start June 1 and end August 21, with required staff training completed before the first week of the season.

Physical Demands...- Ability to continuously teach, stand, walk
- Ability to bend, squat, climb stairs and hills and lift frequently
- Ability to lift up to 30 pounds frequently

Campers...
Trackers Overnight Programs serve campers grades 4-12. Most are coming from the Pacific Northwest, especially the Portland area. A few travel from out of state and will be shuttled from PDX airport to attend programs.
