Our expert Trackers Guides lead immersive, hands-on classes that connect you to the land. From setting your first spile to the final boil, the Maple Tapping workshop helps you build confidence, seasonal awareness, and self-reliance through time in the woods.

Maple Tapping is a journey through traditional forest skills and seasonal exploration. Dive into these core subjects:

Tree Identification & Foraging Explore the 80-acre forest at Camp Trackers. Learn to spot Big Leaf Maples and other native species in their winter dormant state while enjoying a guided nature hike.

Tools & Tapping Master the tools of the trade. Get hands-on instruction on how to safely set a spile (tap) and collect sap in a way that respects the health of the tree.

The Art of the Boil Discover the science of evaporation. Watch a demonstration of the boiling process and learn how raw sap is condensed into rich, flavorful syrup.

What You Do

Get your hands sticky and your boots on the trail. Every Maple Tapping Adventure includes:

  • A guided exploration of the land and a short nature hike
  • Identify Big Leaf Maples and other local tree species along the way
  • Learn an overview of maple tapping tools and traditional methods
  • Practice hands-on instruction setting a tap (spile)
  • Collect sap and observe a demonstration of the syrup boiling process
  • Enjoy a sap and syrup tasting to experience the final reward!

Meet Your Instructor

Kristen is a 2022/2023 Trackers adult immersion graduate with a lifelong love for plants and animals. Originally from Buffalo and having moved to Portland from North Carolina in 2021, she brings a deep appreciation for the PNW’s "tree water" magic. With a Master’s in psychology and experience as an undergraduate instructor, Kristen blends her educational background with her passion for the outdoors and the abundance of local edibles.


Location: Camp Trackers

Our 80-acre forested site is located in Sandy, Oregon, nestled at the edge of the Bull Run Wilderness Area. This expansive landscape features apex forests, complex ecosystems, and open fields where elk and deer roam. Camp Trackers is equipped with on-site parking, bathroom facilities, and a covered workshop area that allows classes to run comfortably in varied weather.


The Trackers Journey

Our program follows the Trackers Journey, where new and old friends come together for an epic adventure. Participants develop skills in independence, grit, and self-direction. Together as a Trackers team, they learn to care for and connect with their community, many generations, and nature.
